SAUSAGE AND TORTELLINI TOSS | |
1 (7 oz.) pkg. cheese filled tortellini 1/2 lb. smoked polish sausage, thinly sliced 2 c. broccoli flowerets 1 tbsp. butter 1 tbsp. flour 3/4 c. milk 1 tbsp. mustard 1 c. shredded process Swiss cheese (4 oz.) In large saucepan, cook tortellini uncovered in boiling water for 15 minutes; stir occasionally. Add broccoli and sausage to water. Return water to boiling. Reduce heat. Simmer, uncovered, 5 to 10 minutes more or until tortellini is tender but slightly firm, stir occasionally. Meanwhile, in a medium saucepan melt butter. Stir in flour. Add milk all at once. Cook and stir until thickened and bubbly. Stir in cheese and mustard and cook until cheese melts. Remove from heat. Drain tortellini mixture and return to hot pan. Add cheese mixture and toss until coated. Serve at once. Serves 4. |
