SWEET POTATO PIE 
4 med. yams
1 c. sugar
1/2 stick butter
1/4 tsp. salt
1/2 c. coconut
1 tbsp. nutmeg or cinnamon
1 tbsp. of flavor
1/4 tsp. vanilla
3 eggs, separated
1/3 c. milk
1 unbaked 9-inch pie crust

Boil yams until they are well done. Peel and mash. In large bowl, mix yams, sugar, butter and salt. Beat well. Add milk, lemon flavor, coconut, nutmeg and egg yolks. Continue beating. Beat egg whites until fluffy. Fold into mixture. Pour into pie crust shell; bake in 350 degree oven for 35-45 minutes.
