HAMBURGER-RICE CASSEROLE 
1 lb. hamburger
1 c. dry rice
1/3 c. chopped celery
1/3 c. chopped green pepper (optional)
1 chopped onion
2 c. tomato juice
1 1/2 c. boiling water
Velveeta cheese
Salt and pepper

In oven proof skillet cook hamburger, celery, pepper and onion until hamburger is brown. Drain grease. Add tomato juice and boiling water, rice and salt and pepper. Put lid on and bake 350 degrees for almost 1 hour. Take lid off and put Velveeta cheese on top and let melt and bubble up.
