VEGETABLE MEDLEY 
1 1/2 c. sliced onion
2 c. celery strips (cut in 2 inch strips and cut down lengthwise)
1 1/2 c. carrot strips (cut in 2 inch strips; cut in 2 or 4, not too thick)
2 c. fresh or cooked green beans (if frozen, cook a bit first)
3/4 c. green pepper strips (if diced, just sprinkle in)
2 c. tomatoes and juice (canned or fresh)
4 tbsp. butter
1/8 tsp. pepper
2 1/2 tsp. salt
1 tbsp. sugar
3 tbsp. Minute Tapioca

Mix together. Put in a tightly covered 3 quart casserole dish. Bake at 350 degrees for 1 hour or more.
