FETA WALNUT SALAD AND BASIL
DRESSING
 
1 bunch spinach, cleaned and torn
1 avocado, diced
1/4 red onion
1/2 c. Feta cheese (4 oz. crumbled)
1/2 c. walnuts

DRESSING:

1/2 c. olive oil
1/4 c. red wine vinegar
1 tbsp. dried basil
2 tsp. sugar
1/2 tsp. each salt and pepper
2 pressed garlic cloves

Blend all in blender or stir vigorously. Add to salad just before serving.
