SOPAIPILLAS 
4 c. sifted all-purpose flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
2 tbsp. vegetable shortening
1 c. milk
Vegetable oil for frying

Heat vegetable oil while dough is resting (20 minutes).

Sift flour, baking powder, salt and sugar into a large bowl. Cut in shortening until mixture forms a firm dough.

Knead dough on a lightly floured surface just until smooth. Cover; let rest 20 minutes. Roll out to 1/4" thickness; cut into small squares.

Oil should be heated to 375 degrees. Fry Daddy is recommended. Fry sopaipillas, a few at a time, turning often to fry evenly, until golden brown. Remove from oil to paper towel. Sprinkle with cinnamon-sugar or powdered sugar. Yield: 48 squares.
