KAREN'S SESAME NOODLES 
6 tbsp. crunchy peanut butter (or a combination of peanut butter & sesame paste - do not use sesame paste alone)
6 tbsp. soy sauce
3 tbsp. red Chinese vinegar
3 tbsp. sesame oil
3 tsp. sugar
3 to 6 tbsp. chili oil
Lomein noodles
Cucumbers & scallions for garnish

1. Mix first 6 ingredients.

2. Boil noodles until soft. Drain water.

3. Place in well-greased (use liquid vegetable oil) casserole. Bake in 350 degree oven for 30 to 45 minutes until noodles feel firm. (Top of noodles may crisp if you don't mix them and replenish with oil frequently.) Expect noodles to stick to container.

4. Mix together noodles and sauce thoroughly, placing them in your serving bowl. Refrigerate.

5. Garnish with chopped cucumbers and scallions before serving.
