1 lb. pork 1/2 lb. beef liver 1 tbsp. soy sauce 1/4 c. white vinegar 1 tsp. salt 4 cloves garlic, crushed 1 c. water 2 tbsp. lard or cooking oil 1 med. onion, sliced 4 tomatoes, sliced 3 potatoes, quartered 1 green pepper (bell pepper) 1 red pepper (bell pepper) Slice green and red peppers. Cut pork and liver into serving pieces about 1/4- inch thick and 1-inch long. Marinate liver in soy sauce for 15 minutes. In a deep casserole combine pork, vinegar, salt, half the garlic, and the water. Cover and cook at medium heat until pork is tender. Heat lard and saute remaining garlic, the onion, and the tomatoes. Add pork and broth. Simmer for 25 minutes. Stir in liver and potatoes. Simmer until liver is tender. Add green and red peppers. Remove from heat when sauce thickens. |
