BROCCOLI PUFF 
2 (10 oz.) pkgs. frozen chopped broccoli
1 c. Bisquick baking mix
1 c. milk
2 eggs
1/2 tsp. salt
1 c. (about 4 oz.) shredded Cheddar cheese

Heat oven to 325 degrees. Butter 1 1/2 quart souffle dish or 1 1/2 quart casserole. Cook broccoli as directed on package, drain. Beat baking mix, milk, eggs, and salt with hand beater until smooth. Stir in broccoli and cheese. Pour into souffle dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve at once. Makes 6 servings. Corn or spinach can be substituted for broccoli.
