GREEK DRESSING FOR THANKSGIVING 
1 lb. chicken giblets
2 lbs. hamburger or sausage
1/2 lb. butter
Salt and pepper to taste
3 onions, chopped fine
2 c. diced celery
2 lg. apples, diced
1/2 c. parsley, chopped fine
1 tsp. cinnamon
2 tsp. ground cumin
2 c. raisins
Pine nuts
1 lb. cleaned chestnuts
Cashew nuts, if desired
2 qt. chicken broth
1 1/2 c. rice

Saute giblets with butter, meat and chopped onions, celery, apple, parsley, salt and pepper, cinnamon and cumin. Let cook a while. Add chicken broth. Add raisins, pine nuts, chestnuts and cashews. Add 1 1/2 cups rice (or according how much you wish to make). Cook until rice is done. You may need to add more broth or water as it cooks, taking care not to scorch. Serve with chicken or turkey.
