IRISH OATMEAL CAKE 
1 c. quick oatmeal
1 1/2 c. boiling water

Pour water over oats, let cool.

1 c. white sugar
1 c. brown sugar
1/2 c. shortening
2 eggs
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. salt

Mix well, add oatmeal mixture.

1 1/2 c. sifted flour
1 tsp. baking soda

Bake in greased 9 x 13 inch pan at 350 degrees for 35-40 minutes.

6 tbsp. melted butter
1/4 c. milk
3/4 c. brown sugar
1 tsp. vanilla
1 c. coconut
1 c. nuts (if wanted)

Broil until brown - if you want a chocolate cake, drop 2 squares unsweetened chocolate into boiling water and oatmeal mixture. Serve either warm or cold.

This is hands down the best Irish oat cake I have ever had. Though I have made this cake many times, I have yet to make it with the broiled coconut topping. I like mine best with vanilla buttercream frosting.
