GREEK SALAD 
1 sm. head lettuce
2 green onions, chopped
1 sm. cucumber
1 sliced tomato
1 sm. green pepper strips
Feta cheese
Black olives
Anchovy fillets (optional)
Greek peppers (peppercini)

Break lettuce into small pieces. Place in bowl with onion, cucumber, green pepper and tomato. Pour dressing over vegetables (enough to coat). Garnish with feta cheese in blocks or crumbled, anchovy fillets, olives, and Greek peppers. Serves 5-6.

DRESSING:

2/3 c. olive oil
1/3 c. wine vinegar
1 tsp. salt
1/4 tsp. pepper
1 tsp. oregano
1 clove garlic, crushed

Combine in small jar. Cover and shake well. Makes 1 cup.
