SEAFOOD GUMBO 
1 1/2 c. oil
1 c. flour
2 med. onions, chopped
1 green pepper, chopped
1 c. minced celery
Crab meat, fresh shrimp
1 pt. oysters
3 c. cold water
1/2 c. parsley, minced
1/2 c. green onion tops, chopped
Seasonings to taste
Cooked rice

Combine oil and flour in heavy kettle and heat to make a roux, stirring until mixture is dark brown. Add onions, pepper and celery and saute 3 minutes. Add shrimp and water and stir well. Add parsley, onion tops, oysters and mixed seasonings, along with crab meat and about 2 quarts more water. Cook 15 minutes longer. Serve with rice.
