HAWAIIAN BANANA BREAD 
1 1/4 c. sifted flour
1 c. sugar
1/2 tsp. salt
1 tsp. baking soda
1/2 c. vegetable shortening
3 sm. ripe bananas or 1 c. puree
2 eggs

Sift dry ingredients into a bowl. If you have a blender, place all ingredients in it and whip until it forms an emulsion. Bake in a lightly greased and floured 9"x9"x2" pan for about 40 to 45 minutes in a 350 degree oven. Cut in squares and serve plain or spread with butter.
