8 tart apples, cored and coarsely chopped 1 c. unfiltered apple juice or cider 1 2/3 c. brown sugar or honey Grated zest of one lemon Combine apples and the juice in a heavy saucepan over medium heat and cook until the fruit is soft and liquid has evaporated (about 10 minutes). Puree in blender or food processor. Measure puree into heavy saucepan and add about 1/3 cup brown sugar or honey for each cup of puree. Cook over very low heat, stirring occasionally until thick and dark brown, from 2-4 hours. |
