SWEET POTATO CASSEROLE 
1 (No. 2) can whole sweet potatoes (2 1/2 c.)
3 tbsp. butter
1/2 tsp. salt
1/4 c. hot orange juice
1 (9 oz.) can (1 c.) crushed pineapple, drained
4 marshmallows, cut in half

Mash potatoes; add butter, salt, and orange juice; beat until light and fluffy. Add drained crushed pineapple. Pour into greased 1-quart casserole. Dot with butter. Bake in moderate oven at 375 degrees about 15 minutes. Top with marshmallows and bake until marshmallows are melted and golden, about 15 minutes.
