SCALLOPED CHICKEN 
2 chickens
1 1/2 c. celery
1/2 sm. onion
1 c. grated Velveeta cheese
4 c. chicken broth
1/4 tsp. pepper
1 can cream of mushroom soup
2 well beaten eggs
4 c. crushed Ritz crackers

1. Cook and debone the chickens.

2. Cook celery and onion until soft.

3. Mix all ingredients together except for 1 cup of the Ritz crackers.

4. Place mixture in greased 9"x13" pan. Sprinkle the remaining 1 cup crushed crackers over the top.

5. Bake 1 hour at 350 degrees. Let stand 10 minutes.
