SKILLET SPANISH RICE 
1/4 c. bacon fat
1 med. onion, chopped
1/2 med. green pepper, chopped
1/2 lb. raw rice
2 (8 oz.) cans tomato sauce
1 3/4 c. hot water
1 tsp. mustard
1 tsp. salt and pepper
1 lb. ground beef

Melt fat in skillet. Add onion, green pepper, beef and rice. Stir over high heat until lightly browned. Add tomato sauce and remaining ingredients. Mix well. Bring quickly to a boil. Cover tightly and simmer 25 minutes. 1/2 cup grated Cheddar cheese may be added just before serving. For packaged precooked (Minute) rice, simmer only 10 minutes.
