12-14 c. flour 2 tbsp. salt 2/3 c. sugar 3 pkgs. dry yeast 5 c. very warm water 2/3 c. lard or Crisco Put 5 cups flour in large bowl. Add salt, sugar and yeast. Do not pre-soak yeast. Add water and lard. Mix well. Let rest 10 minutes then beat very hard. Add 3 cups flour and beat. Add more flour until too stiff to stir. Turn out on floured board or table and knead until elastic (keep dough sticky rather than too stiff). Add flour as needed. Cover and let rise until doubled, about 1 1/2 hours. Shape into loaves, buns or cinnamon rolls. Let rise again until doubled. Bake at 350 degrees for 1 hour for loaves, 20 to 25 minutes for buns. |
