3 c. flour 3/4 c. sugar 2 or 3 eggs 1 c. currants, dried 1/2 lb. shortening (should be lard) 1 tsp. salt (scant) 2 tsp. baking powder 1 tsp. nutmeg Sift flour, sugar, salt, baking powder and nutmeg. Add shortening and mix like pie dough. Add eggs and a few drops of milk so dough holds together. Make balls and flatten. Bake on both sides on hot griddle on top of stove as pancakes until lightly browned. Children like to make these and eagerly watch them come off the griddle for immediate consumption. |
