WHOLE WHEAT PANCAKES | |
3/4 c. soy flour 3/4 c. wheat germ 1 1/2 c. whole wheat flour 1 1/2 tsp. baking powder 3/4 tsp. salt 3/4 tsp. baking soda 3 eggs 3 tbsp. butter, melted 3 tbsp. molasses, unsulphured 3 c. buttermilk or sour milk Sift and measure the whole wheat and soy flours. Resift with other dry ingredients. Beat eggs well and add melted butter, molasses and sour milk. Stir into the dry ingredients. Beat until smooth and bake on hot griddle. Serves 4. Makes 16 (8 inch) pancakes. Serve with apple sauce, sliced fruit or honey. Pancakes are light, tender, milky sweet and satisfying. |
