LOW FAT EGGNOG | |
Over medium heat stir 4 cups skim milk, 1 (12 ounce) can evaporated skim milk, 1 (8 ounce) carton frozen egg product, thawed and 1/2 cup sugar about 10 minutes or until slightly thickened. DO NOT BOIL. Stir over bowl of ice about 2 minutes. Cover. Chill 4-24 hours. Stir in 1/3 cup light rum and 1 teaspoon vanilla. Stir in more skim milk for desired thickness. Sprinkle with ground nutmeg. Serves 6. |
