SUET PUDDING 
1 c. ground suet
1 c. cracker crumbs
1 c. brown sugar
3/4 c. flour
1/2 c. raisins
1/2 c. chopped dates
1/2 c. walnuts
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 lg. egg
3/4 c. sour milk or buttermilk

Mix together dry ingredients, add milk and beaten egg. Steam in double boiler for 2 hours.

SUET PUDDING SAUCE:

1 c. brown sugar
1 tbsp. butter
1/4 tsp. lemon extract
2 c. water
3 tbsp. cornstarch, dissolved in 1/2 c. cold water

Bring to boil sugar, water, butter, and lemon then add cornstarch mixture and stir until thick.

Pour warm sauce over warm pudding and top with whipped cream.
