SAUTEED ROMA TOMATOES 
3 tbsp. butter
1 pint Roma or cherry tomatoes
chopped fresh parsley

Heat butter in a large skillet over medium heat. Add tomatoes; cook 2 to 3 minutes or until thoroughly heated, stirring often. Be careful that skins do not burst. Sprinkle with parsley. Use as a garnish or complement to other side dishes.
