FRESH VEGETABLE SCRAMBLED EGGS 
5 med. eggs
2 tbsp. milk
2 slices onion, finely chopped
1/2 sm. green pepper, finely chopped
4 sm. fresh mushrooms, sliced
1 slice tomato, chopped
1-2 tbsp. butter
Salt & pepper
Grated sharp Cheddar cheese

In medium bowl, beat eggs. Add milk, onions, peppers and mushrooms. Melt butter in skillet over medium-high heat. Pour egg mixture into skillet. Scramble lightly until almost done. Remove from heat, divide servings in skillet. Top with chopped tomatoes and cheese. Cover, let stand until cheese is melted 1-2 minutes. Serves 2 generously. Delectible!
