PINEAPPLE SALAD | |
2 sm. pkg. strawberry jello 1/2 c. sugar 2 c. boiling water 2 c. crushed pineapple (juice and all) 1 (8 oz.) pkg. cream cheese, room temperature 1 lg. can evaporated milk 1 c. nuts Mix first 3 ingredients. Add crushed pineapple and chill until nearly stiff. Chill milk in large mixing bowl (in freezer of refrigerator) until partially frozen at edges. Beat at high speed until thick. Add sugar and vanilla as if using for topping. Beat in soft cream cheese. Beat in jello mixture. Sprinkle nuts on top. Cut squares when firm. Serves 15-20. |
