SPINACH QUICHE | |
Pastry for 9 inch pie shell 4 eggs, beaten 1 c. milk 3/4 tsp. salt 1/4 tsp. pepper 1/4 tsp. nutmeg 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained 1 c. (4 oz.) shredded Swiss cheese, divided Roll out pastry to fit 9-inch pie plate. Flute edges. Prick bottom. Bake in preheated 425 degree oven for 8 minutes. In medium bow, mix well eggs, milk, salt, pepper, nutmeg. Layer spinach and 1/2 cup cheese in pie shell. Pour in eggs mixture. Sprinkle with remaining 1/2 cup cheese. Bake in preheated 425 degree oven, 45 to 50 minutes. |
