TEX MEX LASAGNA | |
1 lb. beef 1 (16 oz.) can corn, drained 1 (16 oz.) can tomato sauce 1 c. hot salsa sauce 1/2 tbsp. chili powder 1 (16 oz.) cottage cheese 2 eggs 1/4 c. Parmesan cheese 1 tsp. oregano 1/2 tsp. garlic salt 12 taco shells 1 c. shredded cheddar cheese Brown meat and drain. Add corn, tomato sauce, hot sauce and chili powder. Simmer for 5 minutes. Combine cottage and Parmesan cheeses, eggs, oregano and garlic salt. Mix well. Arrange 6 shells on bottom of greased 9 x 13 inch pan. Top with 1/2 of the meat mixture. Spoon cheese mixture onto meat, add 6 more shells; add remaining meat mixture. Bake at 350 degrees for approximately 30 minutes. Sprinkle cheddar cheese and put back in oven to melt. Serve with corn muffins. |
