1 cup UNCLE BEN'S® Converted Rice
1 cup water
1 teaspoon salt
2 cups whipped topping
2 tablespoons sugar
1 1/4 cup mayonnaise
1 1/2 cup celery, sliced
2 large red apples, cored, coarsely chopped
1/2 cup raisins
1/2 cup walnuts, coarsely chopped
Cinnamon, to taste

Cook rice in water with salt according to package directions. When cooking is complete, transfer to shallow pan. Cover and chill. Fold whipped topping and sugar into mayonnaise. Fold topping mixture, celery, apples, raisins and walnuts into chilled rice. Sprinkle with cinnamon before serving.
