COCONUT CUSTARD PIE 
9 inch unbaked pie shell
2 1/2 c. milk
1/2 c. sugar
3 eggs
1 1/2 tsp. vanilla
1/2 tsp. salt
1/4 tsp. ground nutmeg (optional)
1 c. shredded coconut

Mix and bake at 425 degrees 20 to 25 minutes or until knife comes out clean. Cool. Garnish with whipped cream.
