RED BEANS AND RICE WITH SAUSAGE 
1 lb. red beans
1/2 lb. ham
2 qts. water
3 c. chopped onion
1 bunch green onions (chopped)
1 c. chopped parsley
1 c. chopped bell pepper
2 pods crushed garlic
1 tbsp. salt
1 tsp. red pepper
1 tsp. black pepper
3 (big) dashes Tabasco
1 lb. smoked sausage
1 (8 oz.) tomato sauce
1/4 tsp. oregano
1/4 tsp. thyme
1 tbsp. Worcestershire

Cook beans and ham in the water slowly for 45 minutes. Add all vegetables, seasonings and tomato sauce to mixture. Cook slowly for about 1 hour. Add more water if needed. Add sausage that has been cut in thin slices and cook 45 minutes more. Remove from the meat and cool. Reheat and bring to a boil, then simmer for 30-40 minutes. Serve over hot rice.

Omit red pepper for milder taste. Better if made the day before you serve it.
