COTTAGE CHEESE AND PINEAPPLE
SALAD
 
1 c. crushed pineapple
2 tbsp. water
2 tbsp. vinegar
1 pkg. Jello, lime, lemon or orange (3 oz. size)
1/2 c. sugar, scant
1 c. Cool Whip
1 c. cottage cheese or more
1/2 c. chopped pecans
3 stalks celery, chopped fine

Heat together first 4 ingredients until Jello is dissolved. Let cool. Add Cool Whip and add sugar. Fold in cottage cheese. When it starts to set add pecans and celery.
