SWEET POTATO PIE | |
1 (29 oz.) can sweet potatoes, drained & mashed 2 c. sugar 2 tbsp. soft butter 1 tbsp. flour 1 tsp. cinnamon 1 tsp. nutmeg 2 tsp. vanilla 1/2 tsp. baking powder 1/4 tsp. salt 2 eggs 1/2 c. half & half Unbaked pie shell Combine sweet potatoes with all ingredients except eggs and half & half. Mix well. Beat in eggs and add half & half. Pour into pie shell. Bake for 15 minutes in a 425 degree oven. Turn oven to 350 degrees and bake 45 minutes longer. Note: To prevent pie crust edges from burning, cover with foil strips. |
