GINGER COOKIES 
1/2 c. molasses
1 c. sugar
2 eggs
1 c. shortening
1/2 c. honey
1 tsp. ginger
1 tsp. cinnamon
2 tsp. baking soda, dissolved in little water
4 c. flour

Mix molasses, sugar, eggs, honey and shortening together. Beat well. Add remaining ingredients. Let rest at least 1 hour before baking. Shape into balls - roll in sugar - bake at 350 degrees for 10 minutes. Optional - frosting.

FROSTING:

2 c. sugar
3/4 c. water
1/8 tsp. salt

Put in saucepan and bring to boil - boil until it spins a thread (235 degrees). In a mixer bowl put 1 envelope Knox gelatin dissolved in 1/4 cup water, 1 teaspoon vanilla. Slowly pour hot sugar mixture into gelatin beating until a spreadable consistency. Frost bottom of cookie.
