MANDARIN ORANGE CAKE 
1 box Duncan Hines Butter cake mix
1/2 tsp. salt
1 can mandarin oranges
1 tbsp. vanilla
1/2 c. cooking oil
1/4 c. sugar
4 eggs

Combine mandarin oranges, sugar and salt in blender and blend well. Beat eggs and add to cake mix, along with oil. Add vanilla to cake mix, then add the orange mixture. Mix well.

Pour batter into three (9 inch) greased and floured cake pans. Bake at 350 degrees for 25-30 minutes. Let stand in pans 5 minutes before removing. Let cool and top with the following icing.

ICING:

1 lg. box vanilla instant pudding
1 lg. container Cool whip
1 tsp. vanilla
1 lg. can crushed pineapple in juice
1/4 tsp. salt

Mix vanilla pudding and crushed pineapple together. Stir until thick. Add Cool Whip, salt and vanilla. Blend well. Spread over cooled cake.
