VENISON STEW | |
5 lbs. cubed venison Flour 1 gal. beef stock 1 1/2 c. brewed black coffee 1/2 c. ketchup 2 med. onions 1/2 tsp. thyme 1/4 tsp. black pepper 1/2 tsp. garlic powder 1/8 tsp. rosemary 1/4 tsp. basil 6 med. potatoes 5 carrots 1 c. cut up celery 9 oz. frozen peas Baking powder biscuits Dredge venison in flour and brown in roasting pan. Add stock, coffee, ketchup, onions and seasonings. Simmer 2 hours or until meat is tender. Add more liquid if necessary. Add potatoes, carrots, celery and cook until done. Add peas, thicken to desired thickness. Serve over baking powder biscuits. |
