FANCY SHRIMP 
4 tbsp. butter
3 tbsp. chopped onion
1/4 c. flour
Salt to taste
1/4 tsp. dry mustard
Pinch of pepper
1 1/2 c. milk
1 c. (4 oz.) shredded Swiss cheese
1 lb. frozen shelled shrimp, cooked and drained
1 (4 oz.) can mushrooms, drained
1/4 c. flavored bread crumbs

Melt butter in pot. Saute onion about 5 minutes. Stir in flour, salt, mustard and pepper. Cook until bubbly. Add milk. Cook and stir until thick. Add 3/4 cup cheese. Cook until melted. Add shrimp and mushrooms. Place in greased casserole dish. Sprinkle with 1/4 cup cheese and bread crumbs. Dot with 1 tablespoon butter. Bake at 400 degrees for 10 minutes until brown on top.
