APPLESAUCE RAISIN MUFFINS 
1 lg. egg
2 tbsp. vegetable oil
1 1/2 c. unsweetened applesauce
2 c. flour
3/4 tsp. baking soda
2 tsp. baking powder
1/2 tsp. nut meg
1/2 tsp. cinnamon
3/4 c. raisins

Beat together egg, oil and applesauce. Sift together flour, baking powder, soda and spices. Add flour; mix to applesauce mix and beat well. Stir in raisins. Spoon batter into oiled and floured muffin wells. Bake at 375 degrees for 20 to 25 minutes or until firm to the touch and browned. Cool on wire rack. Delicious topped with creamed cheese.
