CUSTARD PIE 
4 slightly beaten eggs
1/2 c. sugar
1/4 tsp. salt
1 tsp. vanilla
2 1/2 c. scalded milk
1 (9 inch) deep dish unbaked pie shell

Roll out dough to less than 1/2 inch. Thoroughly mix eggs, sugar, salt and vanilla. Slowly stir in hot milk. At once pour into unbaked pie shell. Dash top with nutmeg. Bake 5 minutes at 475 degrees, plus 10 minutes at 425 degrees or until inserted knife comes out clean.
