"SZECHUAN" NOODLES 
Cook 3 ounces of linguini for 12 minutes until "al dente".

SAUCE:

4 tsp. hot water
4 tsp. natural peanut butter
1 tsp. tahini sauce
1/2 tsp. tamari (low sodium soy sauce)
1/2 tsp. white wine vinegar
1 scallion, divided (white part finely chopped, green top sliced diagonally
reserved for top)
1 clove garlic, minced
1/4 tsp. sugar
Dash of hot pepper flakes

Mix all ingredients for sauce in 4 teaspoons hot water (microwave to boil on high for 1 minute). Pour sauce over linguini in a heated serving bowl and garnish with reserved scallion greens. This an a salad makes a great meal for one person. Preparation time is approximately 20 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
