SWISS STEAK WITH RICE 
1/4 c. flour
2 tsp. salt
2 tsp. paprika
1/2 tsp. pepper
1 lb. round steak, cut in pieces
1 clove garlic
1 lg. onion, sliced
1/3 c. shortening
1/2 c. raw rice
2 c. tomatoes
2 c. hot water

Mix flour, salt, paprika and peppers. Rub steaks with garlic and roll in flour mixture. Brown onion slightly in shortening and remove from pan. Sear meat on both sides and place in greased casserole. Place onion, rice and tomatoes on top of meat. Add remainder of flour mixture to shortening in skillet and blend until smooth. Add hot water gradually and cook until smooth.

Pour over meat with the tomatoes. Bake covered in moderate oven for 1 1/2 hours or until meat is tender and rice is done.
