MANDARIN RICE SALAD 
3 c. cooked rice, cooled
1 (15 oz.) can mandarin oranges, drained
1 celery stalk, chopped
3/4 c. plain yogurt
Juice of 1/2 lemon
1/3 c. slivered almonds

Combine all ingredients in a large bowl. Mix well. Chill several hours. Serve on lettuce leaves. Serves 4 to 6.
