SAND COOKIES 
3/4 c. butter
3/4 c. sugar
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. baking soda

Cream together. Mix well in electric mixer, then with hands. Form into roll - wrap tightly. Chill. Slice thin. Bake at 325 degrees for 15 minutes.

My son, Joe, taught me techniques that enable me to have the image of being a "good cook". Would that I had his skill and style. There is no one I'd rather work with in the kitchen. When he graduated from the Culintary Institute, he and I cooked for days preparing a feast for 50. We really showed off. It is one of my happiest memories. Sonny got some huge wolf fish from the harbor. Joe baked them with wine and bread stuffing and reduced fish stock for several hours to make a veloute' sauce. I made my ordinary offerings and cleaned a mountain of pots and pans, but together we knocked them dead!
