COUNTRY SPECIAL BEETS 
1/2 c. dairy sour cream
2 tbsp. vinegar
1 tbsp. minced onion
1 tbsp. sugar
1 tsp. salt
1/8 tsp. pepper
2 (1 lb.) cans sliced beets or 4 c. sliced fresh beets, cooked

Stir together sour cream, vinegar, onion, sugar, salt and pepper. Pour over beets in saucepan. Heat slowly, stirring occasionally. Do not boil. Serves 6.
