ROLLED HAM & POTATO CASSEROLE 
1/4 c. chopped onions
1 tbsp. butter
3 c. hot mashed potatoes
2 tbsp. chopped pimento
1/2 tsp. salt
Dash of pepper
1 1/2 c. shredded sharp natural cheddar cheese
8 thin boiled ham slices
10 oz. pkg. frozen asparagus, thawed

Saute onions in butter. Combine with potato, pimento, and seasonings; mix well. Lay half of potato mixture, 1 cup cheese and then remaining potato mixture in 10 x 6 inch baking dish. Roll each ham slices around 2-3 asparagus spears. Place ham rolls seam side down on potato mixture. Bake at 350 degrees for 30 minutes. Top with remaining cheese; continue baking until cheese is melted. 6-8 servings.
