ROLLED HAM 'N POTATO CASSEROLE 
1/2 c. chopped onions
1 tbsp. butter
3 c. hot mashed potatoes
2 tbsp. chopped pimento
1/2 tsp. salt
Dash of pepper
1 1/2 c. (6 oz.) shredded sharp cheese
8 thin boiled ham slices
10 oz. pkg. frozen asparagus, thawed

Saute onion in butter. Combine with potatoes, pimento, and seasonings; mix well. layer half of potato mixture, 1 cup cheese, and remaining potato mixture in 10x6 baking dish. Roll each ham slice around two or three asparagus spears.

Place ham rolls seam side down on potato mixture. Bake at 350 degrees for 30 minutes. Top with remaining cheese. Continue baking until cheese is melted. Yield 6-8 servings. (May use broccoli or green beans in place of asparagus.)
