1 lg. eggplant 1 can tomato sauce Parmesan cheese Peel and slice eggplant. Fry in oil until done. Place on paper towel to remove any excess oil. Arrange eggplant in layers with tomato sauce and cheese. Bake 350 degrees until done. |
