PEACH SHORT CAKE 
1 small box vanilla pudding (not instant)
1 can peaches
Cool Whip (or whipped cream)
chopped pecans
crushed pineapple

Mix pudding and peach juice in a saucepan. Simmer, continue to slowly stir until clear and bubbly. Add 1/4 cup of water to thin slightly. Cool. Add peaches.

Mix pecans and drained pineapple with Cool Whip. Spread peach syrup on shortcakes, top with Cool Whip. Other canned fruits may be used too.
