JIM'S WHITE CHILI | |
1 big jar plus 2 small cans Great Northern beans 2 lbs. chicken breasts (about 5) 6 c. chicken broth (1 lg. can) 2 onions, chopped 4 garlic cloves, minced 2 tsp. cumin 1 1/2 tsp. oregano 1/4 tsp. cayenne pepper 1 c. cheddar cheese Cook the chicken until done (I bake it first for 1 1/2 hours with a little water until tender). Cool and then cut into small pieces or shred. (You can also cut the raw chicken into pieces and cook it until done with the onion and garlic.) Sauté the onion and garlic. Add the cooked chicken and spices and simmer a few minutes. Add to the undrained beans and chicken broth. Simmer for 2 hours. Add the cheese and stir until melted. |
