FAVORITE CARROT MUFFINS 
2 c. sugar
1 1/4 c. oil
4 eggs
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
2 1/4 c. grated carrots
1 c. walnuts, coarsely chopped
1 c. raisins

Preheat oven to 350 degrees. Mix oil, sugar, and eggs in mixer for about 2 minutes at medium speed. In another bowl, sift dry ingredients and add gradually to sugar mixture. Add carrots, walnuts, and raisins. Blend dough until no flour is seen. Fill muffin cups (either paper-lined or greased) 2/3 full. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. Serve either warm or at room temperature.
